I love chestnuts especially those roasted ones (those from Japan are always sweeeeet!). This marron mousse cake is encased by spongefingers but does not have a very strong chestnut taste. Since no one is going to eat my cake, I dug out all the bits of candied chestnut in the mousse leaving a creamy mess. Will show you what it looks like before the attack:

Chef says it was the best sponge seen so far (and I’m not the first to be graded if that’s what you are thinking :P).
